Summer Salad Recipes -Easy and Delicious

When it gets so hot in the summertime I get a recipe for salad and try new ones quite often. Since we are in FL with high humidity and it has hit 100° or close several days in a row, you lose you appetite for the heavier meals. I want to share some recipes that we have tried and enjoyed.
Supreme Pizza Pasta Salad
Supreme Pizza Pasta Salad
I was given this recipe by a neighbor many years ago and tried it out on a small group of friends, which might not be the best idea, but I have always done that. Fortunately, everyone liked it. I make it every summer for something a little different, easy and tasty.
Ingredients:
- 2 plum tomatoes, seeded and chopped
- 1/2 medium red onion, chopped
- 8 fresh white button mushrooms, sliced
- 1 small green bell pepper, seeded and chopped
- 1 stick pepperoni, casing removed and cut into a small dice
- 1 pound ball fresh mozzarella or fresh smoked mozzarella, diced
- 20 leaves fresh basil, torn or thinly sliced
- 1 pound wagon wheel pasta, cooked to al dente and cooled
under cold water, then drained
Dressing ingredients:

1 teaspoon garlic salt
1 teaspoon dried oregano leaves or Italian dried seasoning
1 rounded tablespoon tomato paste
- 2 tablespoons red wine vinegar (or eyeball it if you think you need a bit more)
- 1/3 cup extra-virgin olive oil, (eyeball it)
- Freshly ground black pepper
Directions:
- Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl.
- Whisk garlic salt, oregano or Italian seasoning, tomato paste and vinegar together.
- Stream in extra-virgin olive oil while continuing to whisk dressing.
- When oil is incorporated, pour dressing over pasta salad, add a few grinds of black pepper to the bowl; then toss salad to coat evenly.
- Adjust your seasonings and serve salad.
Yield: 6-8 servings
Leftovers make a great lunch or snack the next day

Corn Stuffed Tomatoes
I like this recipe because it is so attractive to serve, and it appears as if you worked much harder than is actually required. It is a healthy salad and one of the easier summer salad recipes.
Ingredients:
- 1 3/4 cups (2 1/2 ears) fresh corn kernels
- 1 cups jasmine rice, cooled to to room temperature
- 1/2 avocado chopped
- 1/4 cup chopped yellow pepper
- 1/4 cup chopped green pepper
- 1/4 cup chopped red onion
- 4 tbsp. olive oil
- 3 tbsp. chopped fresh cilantro
- 2 1/2 tsp. lemon juice
- 1/4 tsp sea salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp ground cumin
- 6 medium vine ripe tomatoes
Directions:
- In large bowl, toss all ingredients together, except tomatoes and set aside.
- Slice tops off tomatoes and remove insides.
- Fill each tomato with 1/2 cup corn mixture and serve

Italian Pesto Salad
This is another Italian pasta salad that is delicious and easy to make. The most time consuming thing in this recipe is cooking the pasta and letting it cool, which is hardly a problem Another good thing about this recipe is you can substitute rice in place of wheat for those with a gluten intolerance.
Ingredients:
- 4 cups uncooked spiral pasta (you can us rice pasta for wheat free version)
- 1 cup fresh basil pesto
- 2 tbsp. chopped green olives
- 1/4 cup pine nuts
- 1 cup frozen peas, defrosted (use fresh if you can get them)
- 12 ounces cherry tomatoes, halved
- Several fresh basil leaves, coarsely chopped
- 1 tbsp. olive oil
- Salt and pepper
Directions:
- Cook pasta according to instructions on the package.
- Make sure the water is salted (at least a half teaspoon per quart).
- Remove pasta from heat and strain when pasta is cooked, but still firm (al dente).
- Put pasta in a big bowl.
- Mix in fresh basil pesto, green olives, and pine nuts.
- Gently mix in cherry tomatoes, peas, fresh basil leaves and olive oil.
- Salt and pepper to taste.
- Chill or serve at room temperature.
Yield: 6-8 servings

Veggie Crudités with Light Dip
This is always a nice addition to salads recipes, as you can use any flavor of dip to taste and of course, you can use any fresh vegetable that you or your family might enjoy.
Ingredients for Dip:
- 1 (3 ounce) package light cream cheese, softened
- 1/2 cup light mayonnaise
- 1/2 cup light sour cream
- 1 tbsp. lemon juice
- 1 tbsp. white wine vinegar
- Pepper
- 1/2 cup crumbled Roquefort cheese
Ingredients Crudités:
- Salt, for blanching water
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 3 carrots, peeled and sliced into sticks
- 1 red bell pepper, cut into sticks
- Cherry tomatoes
Directions for Dip:
- In a mixing bowl, beat all ingredients except Roquefort until smooth.
- Add pepper to taste.
- Fold Roquefort in at the last minute, stirring gently to not crumble the cheese too much.
- Chill for 2 hours before serving with vegetable crudités.
Directions: for Crudités:
- Blanch broccoli, cauliflower, and carrots for 1 minute in boiling salted water.
- Transfer to an ice water bath to stop cooking process.
- Arrange vegetables on a round platter and place dip in a bowl in the center

- 1 can mandarin oranges, drained 1/2 c. pineapple preserves
- 2 cup cubed cantaloupe
- 1-1/2 cup green grapes, halved
- 1-1/2 cup seedless red grapes, halved
Directions:
- In a large bowl, combine the cantaloupe, grapes and oranges. W
- Whisk the preserves; pour over fruit and toss to coat.
- Chill until serving.
Yield: 8 servings
