Black Berry Muffins

Mouth watering easy breakfast recipes are what we eat on the weekends. Typically at our house during the week our morning breakfast consists of healthy recipes of fruit (bananas, blueberries or strawberries), cereal, orange juice and coffee. We freeze bags of our favorite berries when they first get ripe in the summer.

We were fortunate to find fresh picked blackberries last weekend for a nominal fee and now we have 8 bags filled in the freezer. Of course, I had to make some black berry muffins the same day and they were delicious. I use easy recipes whenever possible and this was no exception. I also baked a double batch of muffins so we could freeze a couple of bags of muffins

Black Berry Muffin Recipe

Ingredients:

1/2 cup butter
2 eggs
1 1/8 cup sugar
3 cups flour, divided
3 teaspoons baking powder
1/2 teaspoon salt
1 pinch baking soda
1 cup milk
1 teaspoon vanilla
2 cups blackberries

Directions:

Preheat oven to 400°.Grease muffin pans or use cup liners. In a large bowl cream butter with sugar and add eggs. Reserve 3 tablespoons of the flour and combine the remaining flour with baking powder, salt and baking soda. Combine milk and vanilla.

Alternately add the milk and flour mixture to the creamed butter and egg mixture. Sprinkle reserved flour over berries so they won't sink to the bottom of the muffins. Then, gently fold berries into the mixture. Fill each muffin cup 3/4 full and sprinkle tops with sugar and add a little cinnamon or nutmeg if desired. Bake 15 to 20 minutes, until done.

This recipe makes 24 muffins

Waffles Smothered in Fried Apples

We tend to cook a larger breakfast on the weekends and one we like very well is waffles with cooked apples. My husband cooks the apples and has a magic touch with the right seasoning and I cook my tasty waffles. Do you like waffles?

Waffle Recipe

Ingredients:

1 ¾ cups sifted all-purpose flour

3 tsp. baking powder

½ tsp. salt

2 beaten egg yolks

1 ¾ cups milk

½ cup canola oil

2 stiffly beaten egg whites

Sift together dry ingredients. Combine yolks, milk and oil; stir into dry ingredients. Fold in egg whites gently, leaving a few fluffs as this is what makes this waffles so light and delicious. Bake on waffle maker. You can spray waffle iron with a spray like PAM but that’s not necessary if your iron is non-stick.

Makes 3 10 inch waffles. Serve with hot maple syrup or fruit syrup or with fried apples which is what we do most of the time.

*You may substitute the milk and baking powder with buttermilk and baking soda which is my preference,

Fried Apples

Ingredients:

6 cups peeled and thinly sliced Granny Smith apples

½ cup butter

1 cup sugar

2 tsp cinnamon

Slowly melt butter in skillet on low to medium heat. Add apples, sugar and sprinkle cinnamon over the apples. Stir ingredients, then cover with a lid and continue to cook on a low-med heat. Cook for approximately 5-7 minutes and stir. Cover again and cook just until the apples juices become caramelized; they will be a deep brown color.

Pour over the hot waffles and you have a delicious breakfast. These apples can just be eaten out of a bowl or served with pancakes, ham and many other foods

Link Sausages, Sunny-side-up Eggs,Toast

Easy Link Sausage and Eggs

Another simple breakfast we enjoy is link sausage, fried eggs and wheat toast.

Simple Link Sausage

Use a non-stick spray and spray frying pan. Use a heat just under medium and add sausage. Cover pan and cook for 12-15 minutes turning frequently so you get all sides brown.

Fried eggs sunny-side-up are another simple breakfast item to cook. Use a non-stick skillet, and add butter, olive oil, bacon grease or a non-stick spray. Put the burner on a low heat and break each egg in a small bowl and slide it carefully into the pan. Once the whites coagulate on the bottom after about 1 minute, add 1 tsp. of water and cover pan tightly to hold in steam. Cook until the whites are completely set. Add salt and pepper if desired.

Quick and Easy Breakfast for Kids

This next video will demonstrate how to fry and egg on a piece of toast. I have made this recipe for years and seriously I thought I made it up; so it was a surprise to find this simple video that demonstrates this easy technique. My children loved this recipe when they were young but so did the adults.

These are just a very small sample of breakfast food in our house. We like breakfast food well enough to occasionally have it for dinner when nothing else has been planned.

These are all easy recipes and your family will you or your family will probably love them.

I used to walk in the woods with my mother and pick fresh blakberries, and she would make hot fresh cobbler and it was yummy!!!!!!!!

I had no idea fried apples are so easy! They are one of my favorite side dishes at Cracker Barrel. And blackberry muffins. Never would have thought of such!

That's one kind of muffins I've never made! Go figure - I've made huckleberry though and they were fab. I usually use blackberries for cobbler or pies but good info and will have to try it.

Love the egg in the toast - we did that when my kids were little - they just loved it! Thanks for bringing back a good memory.

Thanks for all the wonderful breakfast recipes. I especially want to try the black berry muffins recipe. I just noticed the black berries are starting to ripen here. My husband makes a really good black berry pie. We've never tried putting them in muffins, so thanks again for the recipe.

I so love sunny side up eggs, i could eat 5 of em in one sitting! :) But your Black Berry Muffin recipe.. sounds yummy! I wish we have those berries here in our country.. Only berry we have is strawberries -_-
